Merry Christmas, and a recipe.

I hope that, if you celebrate, you have a very merry Christmas.  If you don’t celebrate, I hope you’re enjoying a well-deserved day off work.

One of my favorite (newish) Christmas traditions is a drink Terry makes that is the “cheater’s” version of coquito, a Puerto Rican drink that is like coconut eggnog.  It’s super yummy, but very rich.

Here’s the recipe:

In a charming, holiday-themed glass (or a mason jar. doesn’t really matter), combine:

2 shots coconut rum (we use Bacardi Coco), or to taste.  I guess it depends on how your holiday is going.

8 oz egg nog (you can use regular egg nog or soy nog, if you’re feeling healthy and/or are vegan)

Mix thoroughly.

Top with whipped cream and a sprinkling of freshly ground nutmeg.

Super simple, but so tasty.
